Why does quality extra virgin olive oil cost more? The truth about EVO prices

In previous articles, we've covered how to read extra virgin olive oil labels, how to taste it correctly, and how it's made — from olive harvesting to cold extraction. We also compared artisan production with industrial production. At this point, it's natural to ask: why does quality extra virgin olive oil cost so much more?
Not all extra virgin olive oils are equal, even if the label says the same thing. But a legitimate question remains: why can a 0.5-liter bottle of artisan extra virgin olive oil cost 12, 15, or even 20 euros, when 750 ml bottles can be found in supermarkets for 4-5 euros?

The answer isn't the producer's margin. It's the real cost of doing things well, starting from the field.

Early Harvest: More Quality, Less Oil

The first cost factor is the harvest time. As we saw in the article on production, olives harvested at veraison — when the skin begins to change color but the pulp is still green — have the highest polyphenol content and yield oils with intense fruitiness, pronounced bitterness, and pungency.

The problem is that at this stage, the olives have not yet reached their maximum weight and oil content. A typical early harvest yield is 10-14% oil by weight of the olives: to produce 1 kg of extra virgin olive oil, 7-10 kg of olives are needed. By waiting for the olives to fully ripen, the yield increases to 20-25% — almost double — but the sensory profile and polyphenol content plummet.

Those who choose early harvesting for quality reasons pay for this choice in terms of yield: they produce less oil from the same trees, from the same land, with the same labor.

Labor: The Highest Cost in the Supply Chain

Olive harvesting is a labor-intensive operation, especially when working on hilly terrain or with native cultivars that do not easily adapt to total mechanical harvesting.

We use a mixed system: hand-picking in the most difficult areas and mechanical aids where possible. Hand-picking is slow, requires many people, and its cost directly translates into the final price of the oil. There is no way to drastically reduce it without changing the harvesting method — and changing the harvesting method means, in many cases, compromising the quality of the olives that reach the mill.

For comparison: a modern intensive plantation, with trees trained in hedgerows on flat land, can be entirely harvested with straddle machines at much lower costs. The cultivars used are often also selected to adapt to mechanical harvesting and plant productivity, with different characteristics compared to many traditional productions. It is a system choice, not just a technical one.

Rapid Milling: Immediate Processing Comes at a Cost

In the article on production, we saw that the time between harvest and milling is critical: every extra hour is an hour during which enzymatic and oxidative processes degrade the oil's characteristics.

Having an on-site mill and processing the olives within a few hours of harvesting is the best choice from a quality perspective — but it's also the most expensive. Owning a mill requires a significant investment in machinery, maintenance, specialized personnel, and sanitation. Taking olives to an external mill on the same day, choosing times that guarantee immediate processing, also has a higher cost than waiting for days with less traffic.

Those who want to guarantee the maximum freshness of the product cannot do without this cost item — it's not possible to eliminate it without sacrificing quality.

Polyphenols: The Substance that Justifies the Price

Polyphenols are the compounds that give quality extra virgin olive oil its most important characteristics: intense fruitiness, bitterness, pungency, and — from a nutritional point of view — the antioxidant properties and benefits studied by scientific research, including the action of oleocanthal which we discussed in the tasting guide.

An oil rich in polyphenols is the direct result of three choices we've already seen: early harvest, rapid processing, and cold malaxation below 27°C. Each of these choices has a cost. And the result — an oil with a superior sensory and nutritional profile — cannot have the same price as an oil produced without these attentions.

It's the same principle why a tomato harvested ripe and sold the same day costs more than one picked green and ripened in a warehouse: the final product is different, even if both are called "tomato."

Limited Quantity: Not Infinitely Scalable

Another variable that directly affects the price is the quantity produced. An artisan oil mill with a short supply chain, which processes its own olives on defined land, has an annual production limited by the cultivated area and the climatic trend of the year.

This structural limitation prevents the economies of scale that characterize industrial production: one cannot simply "produce more" by buying more olives from others, because this would mean losing control over the supply chain and the quality of the raw materials.

Limited production, combined with fixed costs (land, machinery, labor) that are not proportionally reduced, necessarily leads to a higher cost per bottle compared to those who process millions of liters per year.

What You're Really Buying with Those Extra Euros

In summary, the higher price of an artisan extra virgin olive oil is not an arbitrary surcharge. It is the result of precise technical choices throughout the supply chain:

  • Early harvest with reduced yield to 10-14%, to maximize polyphenols and fruitiness
  • Labor for harvesting in terrains and with methods that do not lend themselves to total mechanization
  • Rapid processing with an on-site mill or same-day processing, to preserve the characteristics of the fruit
  • Cold malaxation below 27°C, to avoid compromising the aromas during extraction
  • Limited production on own land, with no possibility of infinitely expanding the quantity

Every extra euro compared to the price of industrial oil corresponds to a real choice made upstream — in the field, at the mill, in the warehouse — which determines the quality of what is in the bottle.

Conclusion

Quality extra virgin olive oil costs more because producing it well costs more. It's not marketing: it's supply chain arithmetic. Early harvesting, labor, rapid processing, cold malaxation, limited production — these are real costs that are reflected in the final price.

This doesn't mean that all expensive oil is necessarily good, nor that all cheap oil is bad. It means that if an extra virgin olive oil costs very little, it's worth asking where costs have been cut — and the articles you've read so far give you the tools to understand this, from the label to the taste test.
